BAKED MONTEREY SHRIMP WITH CAULIFLOWER RICE
What you need:
•12 oz shrimp, peeled and deveined
•1 bag of cauliflower rice
•2 tbl oil
•1 14 oz can of diced tomatoes, drained
•1 4 oz can diced green chilis
•1/2 cup bacon pieces
•1/4 cup bbq sauce (I use @tessemaes)
•salt and pepper to taste
OPTIONAL: sliced green onions or cilantro
What to do:
• Preheat oven to 400°
• Take your cauliflower rice and spread onto a baking sheet. Drizzle oil over top and stick in oven for 5 min.
• In a bowl, mix shrimp, bacon pieces, chilis, tomatoes, and bbq sauce together. • Spread shrimp mixture over the cauliflower rice and place back into the oven for another 10 min or until shrimp are opaque. •Garnish with sliced green onions or cilantro and eat it all up!
Note: You can also make this with chicken if you prefer.
