Watching what you eat in the new year?

It's the new year... and that means the parties of December are behind us. What they left though were a few extra pounds. Ugh. And as you know, the older you get, the harder it gets to drop them. So many of my friends have done the Whole 30 food plan with great success. And after reading about it, I thought I'd give it a try for the month of January. I like it because you don't county anything. You just eat whole foods. And when you can cook, it's not that hard. I'm finding other than having to walk by the birthday cake at work, it's not that hard. So if you're trying to eat a little healthier, diet plan or not, this is a great recipe for after work. Simple and healthy!


What you need:
•12 oz shrimp, peeled and deveined
•1 bag of cauliflower rice
•2 tbl oil
•1 14 oz can of diced tomatoes, drained
•1 4 oz can diced green chilis
•1/2 cup bacon pieces
•1/4 cup bbq sauce (I use @tessemaes)
•salt and pepper to taste
OPTIONAL: sliced green onions or cilantro

What to do:
• Preheat oven to 400°
• Take your cauliflower rice and spread onto a baking sheet. Drizzle oil over top and stick in oven for 5 min.
• In a bowl, mix shrimp, bacon pieces, chilis, tomatoes, and bbq sauce together. • Spread shrimp mixture over the cauliflower rice and place back into the oven for another 10 min or until shrimp are opaque. •Garnish with sliced green onions or cilantro and eat it all up!
Note: You can also make this with chicken if you prefer.

Pet of the Week 

Hey folks, my name is Dexter and I'm a two year old long hair cat with fur coloration they call tick. I guess it has speckles of white, black and brown that gives me a cool look. I also have these long white whiskers that mean I have smarts, of course that could be an old wive's tale, but it sure sounds good to me. Some say I may even have Maine Coon in my bloodlines, but nothing has been proven. No matter; because to me the most important thing is that I'm a nice guy, and I sure hope you'll think so too once you meet me. Read more about him here.
